Weekly snack prep as a mum of 3

Every week I spend a couple of hours making simple, whole food snacks so there’s always nourishing options ready to go.
On the menu this week :
- Fresh Fruit
- Date Brownies
- 2 ingredient base pizzas
- Apricot delight bliss balls
- Ricotta Berry Bake
- 3 ingredient Chocolate Mousse
- Roast Chicken
Date Brownies
Ingredients:
* 1 cup pitted dates
* 1 cup warm milk of choice
* 1 cup plain flour
* 1 tsp baking powder
* 1 tsp vanilla bean paste
* 2 eggs
* 2 tbsp cocoa powder
* ½ cup roughly chopped chocolate
Method:
1. Preheat your oven to 180°C and line a 20cm x 20cm baking tin with baking paper.
2. Add the dates and warm milk to a food processor or blender and blend until smooth.
3. Transfer the date mixture to a bowl and stir through the flour, baking powder, vanilla bean paste, eggs and cocoa powder until well combined.
4. Fold through the chopped chocolate.
5. Pour the batter into the prepared baking tin and spread evenly.
6. Bake for 20–25 minutes, or until the centre is just set.
7. Allow to cool completely before slicing into squares.
Storage:
* Store in an airtight container in the fridge for up to 5 days.
* Freeze for up to 3 months. Defrost at room temperature or pop into lunchboxes frozen—they’ll thaw by snack time.
