HUNGRY GIRL DINNERS EP 2

📌 519 cals, 55g protein, 5g fibre
SERVES 2:
For the chicken -
2 chicken breasts (cut in half lengthways)
5g greek seasoning
1/2 tsp olive oil
For the potatoes -
340g baby potatoes
Olive oil spray
Flakey salt
For the salad -
60g rocket
200g cucumber (diced)
60g red onion (diced)
70g halloumi
100g tzatziki
1. Start by cutting your chicken breasts in half lengthways and marinating in the olive oil and greek seasoning.
2. Scrub your baby potatoes and boil until nice and soft and they fall off a knife, drain and allow to cool slightly.
3. Using the bottom of a glass, smash the potatoes down onto a lined baking tray, spray with olive oil and sprinkle with salt and cook at 200C for 20–25 mins.
4. Cut your halloumi into slices and pat dry with kitchen roll.
5. Pan fry your chicken until cooked through and golden.
6. Dry fry the halloumi 5 mins before the chicken and potatoes are finished.
7. Plate up as shown and ENJOY!
