You’ve been asking for this recipe for a while!
And I did do a small batch version, this is the smallest one I’ve done yet.
This is my one-portion* lasagna recipe.
AND IT’S DELICIOUS!
Cheese filling:
¼ c cottage cheese (if you like ricotta, use that)
1/8 c grated parmesan cheese
1/8 c shredded mozzarella
1 egg yolk
Salt
Pepper
Basil
Italian Seasoning
Onion Powder
Garlic Powder
(I don’t measure my seasonings, I eyeball it. Start with ½ tsp of each and use your best judgement.)
Meat sauce:
1 mild Italian sausage link (you can do a combo of sausage and ground beef; I just forgot to take mine out of the freezer.)
¼ c onion, diced
Garlic (measure with your heart)
Salt
Pepper
Basil
Italian Seasoning
Onion Powder
Garlic Powder
¾ c marinara sauce (if you like yours saucier, use 1 cup.)
3 cooked lasagna noodles, cut to fit your pan.
Parmesan Cheese
Shredded Mozzarella
In small bowl, combine all cheese filling ingredients. Set aside. Remove sausage from casing, cook in pan on medium heat. Break up the sausage as it’s cooking. Once it’s mostly cooked (5 ish minutes) add in onion. Sauté for another 3-5 minutes. Add in garlic and seasoning. Stir. Cook until garlic is fragrant. Add in sauce. Stir. Let cook for 3-5 minutes to meld together. Grease a small loaf pan. Layer meat sauce, noodles, cheese filling, then noodle. Repeat x2. After the second layer of cheese, I added a small amount of parm and mozzarella, then added a layer of noodle and meat sauce. I topped it with more of both cheeses. Cover with aluminum foil. Bake at 375 for 45 minutes. Uncover, bake another 10-15 minutes. Let cool for 15 minutes before removing from the pan.
