Homemade Chicken Mince HSP — Recipe Summary

1. Seasoned Chicken Mince

For 1 kg chicken mince:

* 1 tbsp olive oil or cooking spray
* 2 tsp smoked paprika
* 2 tsp garlic powder
* 2 tsp onion powder
* 1½ tsp ground cumin
* 1½ tsp ground coriander
* 1 tsp oregano
* ½–1 tsp chilli powder or flakes
* 1 tsp salt
* ½ tsp black pepper
* Juice of ½ lemon
* Optional: 1 tsp sumac and ½ tsp MSG

Heat a large pan over medium-high heat. Add the mince and seasonings, breaking it into small pieces. Cook for around 10–12 minutes until browned and fully cooked. Add the lemon juice during the final minute. Let parts of the mince sit against the hot pan briefly to develop crispy edges.



2. Light Garlic Sauce

* 1 cup light Greek yoghurt
* 100 g light cream cheese, softened
* 2 fresh garlic cloves, finely grated
* 1 tsp garlic powder
* ½ tsp onion powder
* 1½ tbsp lemon juice
* 1 tbsp pickle juice
* 1 tsp olive oil
* Salt and black pepper

Whisk everything together until smooth. Add a small splash of water or additional pickle juice if you want a thinner, drizzle-style sauce. Refrigerate for at least 15–30 minutes before serving.

No sweetener is necessary.



3. Sumac Onion Salad

* 1 large red onion, thinly sliced
* 1½–2 tsp sumac
* Juice of ½ lemon
* 1 tsp olive oil
* Small pinch of salt
* Handful of chopped parsley
* Optional: sliced tomato, cucumber and fresh chilli

Massage the onion with the salt, sumac and lemon juice for about 30 seconds. Add the olive oil and parsley, then leave it for 10 minutes to soften.
