Sometimes the simplest dish is the most comforting!

I recently had a tooth removed so I'm keeping my menu to softer foods and pasta was the perfect choice! So I decided to make a single serve pasta sauce from scratch.

Here's the recipe:
1-2 tsp olive oil
1/4 c onion, diced
1 tsp garlic, minced
Salt
1/4 tsp each of:
Onion powder
Garlic powder
Italian seasoning, Basil parsley, oregano
2 Roma tomatoes, halved
1/2 c water, divided
1 tsp sugar
1/4-1/2 c pasta water

Serve with your favorite pasta. I generally use the recommended serving size on the package, I used Brama protein spaghetti.

Heat oil in a pan on medium heat. Add in onions, cook for 3 to 5 minutes until translucent. Then add in garlic stirring continuously for about 30 seconds. Add in all of your seasonings and stir together. Add in 1/4 cup of water to deglaze the pan. Push your onion mixture to the side and place tomatoes insides down into the pan. Add in another 1/4 cup of water and then cover. This is about the time you want to drop your pasta into boiling water in a separate pan. Cook tomatoes for 10 to 15 minutes or until the skin easily pulls away from the tomato. Remove the skin and mash the insides. Stir in a little bit of the pasta water as your pasta cooks. Add the pasta water a little at a time to get the consistency you want. My sauce cooked down with a little bit of pasta for about 10 or 15 minutes until I added a little bit more. Then once I added the pasta and stirred it around I added just a little bit more because I wanted it to better coat the pasta. Then serve it up and garnish it with some parsley.
